1、甲鱼宰杀后用开水焯至外层变色起皱时候捞出,用小刀刮净甲鱼身上的黑质及老皮,去掉爪尖、尾巴,掏净内脏、黄鱼,洗净剁成小块;
2、将鸡肉洗净剁成肉茸;香菇洗净撕成大块;冬笋、火腿切成片;葱、姜洗净后分别切成段和片;
3、取一汤碗加入甲鱼肉、葱段、姜片、高汤,入蒸锅蒸50分钟取出;
4、在汤碗里加入火腿末、冬笋片、香菇块、油菜、葱、姜、味精、料酒、精盐、胡椒粉、用油纸封好,放入蒸锅中蒸15分钟取出,打开油纸拣出葱、姜;
