==做法==
1.猪肉洗净,放到容器里,加入料酒,再加入足量的清水,以漫过猪肉为准,浸泡半个小时到1个小时,以去除血水;
2.锅里烧开一锅水,除盐以外的所有的材料和肉一块放下去,大火烧开,转小火,慢慢卤制半个小时左右,再加入适盐,继续卤制到需要的软硬程度,可以根据喜好自己调节卤制时间;
3.关火,捞出卤肉到容器中,将卤汁中的香料等捞出,将卤汁倒入装卤肉的容器里,泡着卤肉。待凉,可放冰箱保存。需要食用时,取出适量卤肉和卤汁加热即可。

==小诀窍==
现在天气热,卤汁容易酸,所以一次也别做太多。 冰糖为小指头尖那么大颗的;桂皮大约为5CM;干辣椒根据喜好添加。
简易做法
材料:廖排骨浓缩卤汁一包,猪肉1-3斤。

==步骤==
1、将猪肉洗净,放入滚水中氽烫一下,捞起沥干备用。
2、将卤料放入锅里,大火煮滚,放猪肉煮40分钟关火.让猪肉浸泡在卤汤里,吃的时候再取出。
3、改为小火煮至猪肉熟烂入味,关火,待猪肉和汤汁放凉。
4、捞出卤好的猪肉切成片。至此,味道鲜美的卤猪肉就制作成功了。
5、卤汁重复使用时,可根据卤制食品的多少酌量添加本卤料。
