==历史起源==
相传,隋炀帝杨广,一次,带着嫔妃、大臣,乘着龙舟和千艘船只,沿大运河南下来到扬州观看琼花,同时饱览了扬州的万松山、金钱墩、象牙林、葵花岗四大名景,非常高兴。回到行宫,唤来御厨,让他们以扬州四景为题,做出四道菜来,以纪念这次扬州之游。御厨们在扬州名厨的指导下,费尽心思,终于做出了松鼠鳜鱼,金钱虾饼,象牙鸡条,葵花斩肉四道名菜。隋炀帝品尝后,龙颜大悦,特别对其中的葵花斩肉,非常赞赏,于是赐宴群臣,一时间淮扬佳肴,倾倒朝野。
 
传至唐代,有一天,郇(xún)国公韦陟(zhì)宴客,府中的名厨韦巨源也做了扬州的这四道名菜,并伴以山珍海味,水陆奇珍,令座中宾客无不叹为观止。尤其是用那巨大地肉圆子做成的“葵花斩肉”更是精美绝伦。因烹制成熟后地肉丸子表面的肥肉末已大多溶化或半溶化,而瘦肉末则相对显得凸起,乍一看,给你一种毛毛糙糙的感觉,有如雄狮之头。宾客们乘机劝酒道:“郇国公半身戎马,战功彪炳,应佩狮子帅印。”韦陟高兴地举杯一饮而尽,说:“为纪念今日盛会,‘葵花斩肉’不如改为‘狮子头’”。从此,扬州狮子头一名,便流传至今。
