原本是东北农村每年接近年关杀年猪时所吃的一种炖菜。在东北许多地方常年开设杀猪菜,形成东北饮食一大特色。地道的“杀猪菜”,是由多种菜品组合成的系列菜的总称。

主料:新鲜肥猪肉100克、猪血旺150克、猪肝50克、猪大肠50克、白豆腐100克、酸菜100克,粉条若干。
调料:猪油、姜、盐、葱、香菜、花椒面、酱油、糊辣椒面。

===步骤===
1.熟猪五花肉切成片;最好再添加些骨头肉;熟猪肠肚切成块;血肠斜切成片;酸菜洗净,切成细丝;干粉条用开水泡发好,切成长节;冻豆腐切成片。
2.炒锅置火上,放入混合油烧热,投入姜片、葱节炸香,下入酸菜丝炒出味,掺入猪骨头汤,下入猪五花肉、猪肠肚、粉条和冻豆腐,烧沸后撇净浮沫,调入精盐、胡椒粉、料酒、酱油、鸡精等,用小火炖约7分钟后,用漏勺将锅中炖好的菜捞出,装入汤内。
3.将血肠下入锅中,烫至肠片卷曲后,用漏勺捞出放在汤?内炖好的菜上面,另往锅中汤汁里调入味精,起锅倒入汤?内,最后撒上香菜节,随蒜泥味碟一起上桌即成。

==菜品特点==
另外真正讲究的菜馆都选取农村用粮食、猪草圈养而形成的“笨猪”,这种猪才有最纯正的天然肉香。
而“杀猪菜”里面最具代表性的,莫过于以下几味——
蒜泥白肉:大块的猪肉烀熟后切成大片,蘸着盐面或蒜酱吃,解腻增味,最是原汁原味的鲜香。
蒜泥护心肉:就是猪心脏和肝脏之间的那部分肉,口感筋道,同样要蘸蒜酱吃才好。
柴骨肉也作拆骨肉:是从大骨头上剔下来的纯瘦肉。说“拆”,是指大块的瘦肉要用手撕开;说“柴”,是因为这肉烀熟后肉丝分明卖相好看。蘸料由酱油、醋、辣椒油、蒜泥、芥末、腐乳、麻酱等调制而成。
酸菜炖白肉血肠:酸菜要用东北长白菜靠自然发酵变酸渍成,色泽微黄透亮儿;白肉是带皮的大片儿五花肉;血肠做起来要用新鲜的猪血,加入葱花、盐等料调味后灌入肠衣,煮时掌锅的要拿根长针,不时地在血肠在扎一下,待到针眼不冒血时立即出锅才能保证血肠的鲜嫩。这三味共入一锅咕嘟咕嘟的炖出来,猪肉中的肥油已经被酸菜拿净。
