===做法一===
1、首先要整块的兔肉下锅,同时在锅内加入花椒、八角、大料、姜片、大葱段一起过一下水,兔肉就定型了,同时香料的味道也进到了兔肉里面。
2、水开后将兔肉煮至九成熟捞出,冷却后切成手指节左右大小的肉丁,肉一定要现剐新鲜的,肉丁不宜切的太小,放一旁备用。另准备花椒,干红辣椒切成段,生姜、蒜切片备用。喜食麻辣味重的,花椒辣椒可多准备点;
2、将油放入锅中(量宜多),同时将姜、大葱、大料、花椒放到漏勺里面,放进锅里炸至大葱颜色泛黄,捞出倒掉,然后加盐,盐不要太多,因为呆会儿还要加酱油,盐太多会咸,如果味不够的话可以再加,咸了就没法减了。盐一定要先于兔肉加入冷油中,这样下兔肉的时候油才不会乱溅。
3、之后将火开至中火,倒入准备好的兔肉丁,迅速翻炒至兔肉基本脱水。加料酒,翻炒两下后加入备好的辣椒段,继续迅速翻炒,一定要迅速翻炒,不然干辣椒段会很容易糊,翻炒几下就立即下酱油和少量的白糖翻炒至颜色变得金黄,最后加少许醋,闻到香味后,关火。
4、最后加入味精炒匀,放在锅里,等冷了之后便可起锅装盘了。
