==制作过程=====牛蹄===1、牛蹄砸去蹄壳,在火上烧焦皮面,放在水内泡软,刮洗净,用水加整葱,碎姜,入煮锅将牛蹄煮到能拆骨时,捞在凉水内拆去骨,切下掌,水削去掌底粗皮,修去周围边沿,再用葱、姜、料酒,开水氽两遍,仍用凉水泡上。 2、油菜择用嫩心;母鸡肘子用开水氽熟,捞在凉水内刮洗干净,把鸡剁成4大块;干贝洗净;大葱去皮切段,姜去皮切成片;冰糖砸成碎粒。 3、用大砂锅垫上竹箅子,将牛掌放在箅子上,放入鸡、肘子、干贝(用净布包上)、葱、姜、清水、盐、料酒250克、炖酱、胡椒粉,烧开撇尽沫子,用中等火力煨上。 4、炒锅烧热,放入芝麻油,烧热,下入冰糖炒化,待炒到紫色时,放入煨牛掌的汤,再倒回砂锅内,调呈浅黄色,盖上盖,到汁浓牛掌烂时,起出鸡、肘、干贝、葱、姜,将牛掌倒入锅内,加入味精、鸡油,再把汁收浓,出锅,入盘。 5、炒锅烧热放豆油,四成热时,放入油菜心,翻炒几下,加少许汤、盐、料酒、味精炒熟,整齐
