是四川省的经典名菜,属于川菜系。色润红亮,质鲜滑嫩,鱼香味浓。猪肉切成指甲大小的薄片,加盐、酱油、料酒、水豆粉拌匀码味。木耳、兰笋洗净切小片,并入开水中末透沥干。泡辣椒去籽剁细。姜、蒜切细,葱切花。用盐、酱油、料酒、味精,白糖、醋。水豆粉、汤合并入碗配成芡汁。锅置火上,下油烧热,放入肉片炒散,下泡辣椒、姜、蒜稍炒几下,再下木耳、兰笋、葱花炒匀,烹入芡汁,推匀起锅,装盘即成。
