连理双味鱼主料] </ref> ==制作== 1、桂鱼去内脏、去骨,一半切鱼花10朵每块2公分见方,一半切鱼片(7×4×0.3公分)10张。然后分别将鱼花、鱼片加盐,料酒、姜葱码味待用;将嫩葱叶剁细备用,芝士切成3×3公分方形。 2、将鱼头去腮,从下巴处切开按平,洗净。鱼的龙骨去肚腹部分修齐,鱼尾修齐备用。 3、取码味后的鱼片,包入芝士成鱼包,然后裹一层细豆粉,放入全蛋液中裹匀,再捞入细面包糠中粘匀待用。 4、将码味后的鱼花去姜葱后上笼蒸5分钟,同时取锅放入多量油,待油热后下入裹好的鱼包,炸至内部芝士溶化,表面金黄起锅,倒去多余油,下入高汤,放盐,料酒剁好的葱叶茸、花椒油,烧开勾芡成二流汁。
