新都地区的叶儿粑旧时清明时节制作,颜色是淡绿色的,灰面(即糯米粉)做的面皮,揉面时掺入的是鲜艾草叶浆汁,鲜艾草叶浆汁需揉压后用纱布过滤。馅料是碎猪精瘦肉加碎米芽菜加大量化猪油,瘦肉要剁得极细,要达到咬一口油水横流,咸鲜香却无油腻感。垫馍的也不是鲜橘子叶,而是芭蕉叶,夏天用鲜芭蕉叶,冬天用干芭蕉叶。
