发丝百叶和烩牛脑髓、红烧牛蹄筋并称“牛中三杰”,源自李合盛,据传为该店掌勺名厨黄维安在19世纪20年代创制,被誉为“湘菜异苑中别具一格的佳肴”。
1938年, [[ 田汉 ]] [[ 郭沫若 ]] 在李合盛吃的那席菜里,就有发丝百叶 ;解放后, [[ 毛泽东 ]] [[ 长沙 ]] 视察时,也曾特意点过这道菜。
