是一道福建省的传统名菜,属于闽菜系。发好的淡菜整理干净,放开水锅氽烫透,捞出;把鳝鱼宰杀后,剁4厘米长的段,下开水锅烫透捞出,放凉水中洗净;猪肉切片; 葱切段;姜切片;炒锅放在火上,打底油,烧热后,下葱段、姜片、肉片,煸炒透;添鲜汤,放入淡菜、鳝鱼段、冬笋片,再倒入大沙锅内,加入精盐、味精、绍酒,用中火慢炖至酥烂入味;撇去浮油,撒上胡椒粉,带香菜段上桌。
