===食材准备===
带皮五花肉,宁波梅干菜,绍兴黄酒,老姜,细盐,江南酱油,高汤,味精,白砂糖。
===制作步骤===
1、带皮五花肉。切成3厘米方块肉。用开水焯过。
2、炒锅置旺火,油炝锅后下五花肉、白砂糖、老姜块、料酒(可以黄酒)煸炒。续入酱油上色,后加高汤旺火烧沸,倒入发好的梅干菜,小火煨至肉酥菜软。起锅前,加味精,装盘即成。(注:菜出盘前要闷五分钟左右。)

梅干菜、[[五花肉]]、[[干辣椒]]、[[八角]]、[[葱段]]、[[姜片]]、[[冰糖]]、[[黄酒]]、酱油、老抽、盐、鸡粉。
===方法步骤===
1、把五花肉洗净切成小块状。梅干菜用热水浸泡发涨,淘洗干净,捞出沥干。
2、五花肉块下入凉水锅中,大火烧开,然后煮5分钟捞出。
3、炒锅烧热,放入底油,下入八角煸香。然后下入冰糖煸炒,把冰糖煸炒至融化呈浅琥珀色。
4、放入煮过并沥干水份的五花肉进行翻炒。把肉煸透呈金黄色后下入干辣椒、葱段、姜片煸炒。
5、煸出香味后下入梅干菜翻炒,烹入黄酒炒匀,再倒入适量酱油.
6、炒匀后注入适量开水,盖上锅盖焖制40分钟。
7、然后用大火收汁,然后撒少许盐和味精调味,炒匀即可。
