是将鱼肉片成三成厚的大片,再切成二寸长、三分见方的条,放在碗里,加入葱末、姜末、绍酒、精盐、味精、香油,腌好;取发酵老面放在碗里,用水调开,加干面粉、清水适量搅成稠糊状,放在30℃处发酵。待糊发起时,下入食用碱,再放入植物油搅匀;锅入白油,文火烧至五成热,将腌好的鱼条逐条蘸上发面糊,下入油里的漏勺中翻炸,待鱼上的面糊遇热油胀起、呈金黄色时,捞出滴净油,去掉鱼条外部的糊渣不要,码于盘中即可上桌。
