拌肚丝的质量好坏,关键在于煮肚。如果煮得火候不当,不是发硬发艮、咬嚼不动,就是过于酥烂,切不出丝,也没有“嚼劲”。所以,煮的时候,当锅内的水烧开后,要立即转入中小火(水微沸)煮,并不断用筷子戳肚,一旦能戳进肚内,要及时出锅。这样煮出的肚,既脆嫩又有一定的“嚼头”韧性,但抽缩较大不够丰满,因此,需把它放入盘内,加少许鲜汤,再上笼屉稍蒸一下取出。这样做,既能保持肚的脆嫩、有韧性的优点,又能使肚的体积膨胀丰满(一般可膨胀1倍左右),而且切出的肚丝又多又嫩。
