炒锅置火上,放入清水和团鱼,烧沸后用炆火煮约半小时捞出,放入温水中,撕去黄油,剔去背壳、腹甲、甲肢粗骨,洗净切成3厘米见方的块入放入碗中。将火腿肉切成小片,生板油切成丁,盖在团鱼上面。将调料的一半(味精暂不用)、姜米、清汤适量一并放入碗中。将浮麦、获菩用布包好扎口,放入汤中。人参打成细粉撒在上面,用湿棉纸封好碗口,上笼蒸3小时至团鱼酥烂。团鱼出笼后拣去葱节,翻碗,将原汤倒入锅里,用剩下的一半调料及味精少许调味,烧沸后打去浮沫,再打一个鸡蛋在汤内,略煮后浇在团鱼上即成。
