[[活鱼]]1条1000克左右,[[营养汤汁]]100-150克(豉汁味、酸辣味、香辣味、蠔油酱香味、[[葱香]]味、[[泡姜]]味、麻辣味等)
辅料:
鲜蘑、香菜、胡萝卜丝(或 [[ 芹菜 ]] )、熟芝麻、海带、豆芽(或熟土豆)、豆皮、洋葱、青红椒各适量
调味料:
葱、姜少许,鸡粉2克,料酒10克,精盐3克,,味精5克,胡椒粉少许,香料油30克,辣椒油30克
第1步:将鱼肉去腮、内脏后,清洗干净,均匀抹上盐和胡椒粉,加入葱、姜、味精腌制2小时,备用。
第2步:将腌好的鱼肉放在烤鱼甲,在红外线无烟烧烤炉中烤制,需均匀翻面并及时刷香料油,至九成熟,离火备用。
第3步:将烤好的鱼放入专用容器内,洋葱、海带、 [[ 豆芽 ]] [[ 豆皮 ]] 、芹菜、鲜蘑等垫底,鱼身撒上香菜、葱末、姜丝、胡萝卜丝、熟芝麻。
第4步:浇上调制好的营养汤汁,用小火炖煮,待香味散发出来即可食用。
