==做法==
1.将鸡脯肉剔净筋膜,同猪肥肉一起剁成鸡肉泥,置放碗内,加鸡蛋黄、精盐、料酒、味精、葱油,调搅均匀,成料子;
2.猪网油用刀修整边缘,使其齐整,如白菜叶入开水锅内烫透,捞出入凉水过凉,将湿淀粉调入鸡蛋清和成蛋清糊;
3.猪网油置放案板上铺开,撒上一层干面粉,中间抹上一层鸡料子,铺放一层白菜叶,再抹一层鸡料子,再放一层白菜叶,再抹鸡料子,共抹三层厚约三厘米,把猪网油扯起,用刀切去两头,即成鸡塔生坯;
4. 将蛋清糊放入大平盘内,放入鸡塔粘匀蛋糊,正反两面均挂上糊;
5.勺内加入花生油,烧至五成热时,将鸡塔推入勺内,2面煎至挺硬,火稍旺,将鸡塔煎炸至金黄色,取出控净油
6. 鸡塔置放案板上,用刀改切成长五厘米,宽3厘米的条,码入盘内,成上尖下粗的塔形即成。
